What does 250°C actually mean in practice?

A domestic gas or electric hob typically reaches 180–230°C at the pan base during normal cooking. Cast iron pans and baking trays coming out of an oven at 220°C sit comfortably within the 250°C limit. Even a pan that's been at a high heat for some time can go straight onto the board without issue.

Where you'd approach the limit is with a wok over a very high gas flame, or a griddle pan that's been heating empty — but in practice, nobody's putting a screaming-hot empty pan on their chopping board.

Why does tempered glass handle heat so well?

The tempering process — heating glass to around 620°C and rapidly cooling it — does two things. It builds internal compression into the material, making it significantly stronger. And it also makes the glass far more resistant to thermal shock, which is what happens when one part of a material heats up faster than another and the stress causes cracking.

Standard glass has poor thermal shock resistance. Tempered glass handles it well. That's why it's used in oven doors, shower enclosures, and car windscreens — all applications where the glass faces temperature differentials.

Can cold water crack a hot glass board?

This is the scenario people worry about most, and it's worth addressing directly. Running cold water over a very hot glass board — or putting a hot board into cold water — creates rapid thermal shock and could potentially crack it. Don't do this.

The sensible approach: let the board cool to near room temperature before washing. In practice, by the time you've finished eating and cleared up, it's fine. If you're in a rush, lukewarm water rather than cold.

Is glass safer than plastic near heat?

Yes, substantially. Plastic chopping boards can warp, discolour, and release compounds when exposed to heat. Some plastics soften at temperatures well below what glass handles. Glass is chemically inert — it doesn't react to heat, acids, or cleaning chemicals in the way that plastics can over time.

Does heat affect the non-slip feet?
